Winter is finally behind us & spring is here! Gardens are being planned, early crops are planted, lawns are raked & spring clean-up is finished up. Isn’t spring a beautiful season? Tulips are blooming, birds are singing, the tree are leafing out & lawns are needing to be mowed.
Dandelions pop their cheerful heads,
to the dismay of many. Throughout the regions of the worlds, gardeners consider it a bothersome root that is difficult to control. But this common weed equals a green treasure & don’t destroy it until you’ve tried dandelion officinalis which means an official high level herbal therapy. It is a natural source of riboflavin, taraxacum & potassium. Besides being delicious, dandelion gravy is made with other wholesome ingredients that can mostly be purchased at River City Farmers Market.

Here’s a recipe for dandelion gravy that we like. Serve with mashed potatoes & you’ll feel like a king.
Dandelion Gravy
3 Hard Boiled Eggs
5 Slices of Bacon
2 Tbs Flour
1 C Milk
¼ tsp Salt
1 TBS Vinegar
1 TBS brown Sugar
Fry 5 slices bacon. Take bacon our and make sauce with the drippings, add 2 TBS flour and stir. Add 1 cup (or more) milk, slowly while stirring. Add salt, vinegar and sugar.
In a bowl place clean dandelion leaves, cut up the hard boiled eggs, chopped and crumbled bacon. Pour sauce over this just before serving and mix. Serve with mashed potatoes or boiled potatoes.
If you have no dandelions or a sprayed lawn you can substitute other greens for the dandelion greens.
